Some of the best recipes involve fish and just two or three other ingredients. One of my favorite summer meals is salmon. Salmon is truly the king of the sea. It’s light, flavorful, slightly oily, has a nice consistency, and marries well with a wide variety of other flavors. This salmon recipe is simple to make and has really good flavor. Using a citrus marinade brings out the taste in the salmon. It’s also loaded with omega-3, which is good for both your waste-line and your heart.
For this recipe I grilled the Salmon with a Lemon Peppercorn lmarinade and it was perfectly moist, flakey and seasoned. Grilling salmon is a great go-to meal during the week or for company because it’s healthy, so easy, you can be with your guests right up until its time to serve dinner, and there’s very little clean-up involved. You can pan fry it, bake, broil it, cook it in foil, whichever technique works for you.
This is a fool proof recipe that will make you rethink your love affair with fish. This is a great recipe that has a restaurant quality. I opened a bottle of Sauvignon Blanc, a perfect match to the marinade and for the fish. Serve with salad, your favorite steamed vegetables, potatoes, with rice or as is. - 4 sockeye or king salmon fillets (6-ounce, 1-inch thick) boned and skinned
- Pinch kosher salt and freshly cracked black pepper to taste

Remove skin from salmon fillet and any remaining bones. Rinse the salmon under cold water and pat dry with paper towels. In a small bowl, pour marinade over the salmon. Cover, refrigerate and let the salmon absorb the marinade for about 30-minutes, turning occasionally.
Preheat grill for medium heat. Place the marinated salmon on a nonstick grill pan on the grill. Cook salmon, covered, for 6 to 8 minutes per side or until opaque and easily flaked with a fork. If you like your salmon a little more done just tent it with foil after you take it off of the grill and let it sit a few minutes. Serve with your favorite side.
