Mosher Chocolate Cake Recipe

This delectable chocolate cake is easy to make.

Today's recipe comes to us courtesy of Friends of Huntley Meadows Park president Kathi McNeil, who shares her mother's recipe for chocolate cake.

Probably my favorite family recipe is for Chocolate Cake. My Mom, who is 91, taught me and my siblings how to make this at a young age. We all memorized the recipe. I've been told since that it is a War Ration Cake. I always thought of it as the Mosher Chocolate Cake. It doesn't keep more than a couple of days, which is a good thing when you are a kid and chocolate lover! Really good with Mocha buttercream icing!

Mosher Chocolate Cake

Preheat oven to 350 degrees.

In a large mixing bowl add:

3 cups flour

2 cups sugar

6 tbsp. of cocoa powder

2 tsp. baking soda

Mix dry ingredients well and make two small holes and one large hole.  

Add 2 tsp. of vinegar into one small hole and 2 tsp. of vanilla into the other hole.  Then add 10 tbsp. of vegetable oil to the large hole. 

Pour two cups of cold water over everything and mix about 50 strokes with a wooden spoon.

Bake in a greased 13x9 cake pan for 35-40 min. or 2-9" round pans for 30-35 minutes.  A toothpick should come out clean. Freezes well.
